Wednesday WOW: How To Really Have a Family Meal That Counts
Y’all for several years, I’ve been posting yummy, easy-to-cook, semi-homemade meals for you on my series, Wednesday WOW. But, that’s all about to change.
I wanted to combine a recipe with an added ingredient: A dash of something meaningful we can do with our families at the table or just doing life together! You can jump in and link-up your WOW tips to spice things up around here.

So, I’m on the hunt for ideas to really have a family meal that counts! I read about 100 blogs every day on my feedly scanning for creative, crazy-fun topics to share with you. The new Wednesday WOW will feature a new delicious “treat” every week that you will want to gobble and take home for your family.
One of the things I have noticed lately at the dinner table is the challenge of balancing the conversation between a 17 year old and a 6 year old. They both want to share their day with us, but they can find little common ground. One is sharing about a new compelling book they are reading and one is sharing about how many stickers they earned at reading circle. Both subjects are equally as important, but neither seem to have the patience to listen with interest. I can’t wait to try out this great idea I found for dinner conversations with Hannah and Zoie.

Dinnertime can be the perfect time to talk with your family. With work, school and all of the other activities families have going on, it is often the only time they have quality time together to communicate. After a long day, you may find your family doesn’t have much to say at the dinner table. We thought we would help you out with a list of 50 Dinner Conversation Starters! Read all 50 here.
1. What was the best part of your day?
2. If you could travel anywhere in the world, where would it be?
3. If you could be a famous person for a week, who would you be and why?
4. If you could have any superpower, which would you choose?
5. If you had one wish (and you can’t wish for more wishes), what would you wish for and why?
6. If you could eat just one food everyday for a month and nothing else, what would it be?
7. What is your biggest fear?
These would be perfect to cut into strips, place in a jar and pull one out at each meal you are eating together as a family. You could easily cover more than one topic each meal.

Creamy Rotisserie Chicken Enchiladas:
(serves 8)

Items needed:
Mixing Bowl
Skillet
9×13 Glass Pan
Heat Resistant Mixing Spatula
Ingredients:
- 1 Tablespoon of canola oil
- 8 tortillas
- 1 large onion
- 2 1/2 cups of shredded rotisserie chicken
- 2 (4-ounce) cans of chilies
- 1/2 teaspoon of paprika
- 1/2 cup of chicken broth
- 1/2 cup of heavy cream (or you can use regular milk)
- 1 cup of sour cream (low fat also works)
- 2 cups of Mozzarella cheese
- 1 teaspoon of garlic salt
- salt and pepper to taste
- 1 (19 oz) can of green enchilada sauce
Directions:
Preheat oven to 350 degrees.
Heat 1 Tablespoon of oil in a skillet over medium heat. Add the onion and saute for 1 minute. Add chicken, 1 can of the green chilies, 1/2 teaspoon of paprika, garlic salt, salt and pepper. Stir everything together.
Next stir in 1/2 cup of chicken broth. Add cream (or milk) and stir, letting mixture bubble and get hot. Remove from the heat and set aside.
In a bowl combine the enchilada sauce, sour cream and green chilies. Whisk until well combined.
To assemble, spoon some chicken mixture onto each tortilla. Top with two spoonfuls of the enchilada sauce and roll up. Place seam side down in a 9×13 dish. Pour the rest of the enchilada sauce evenly over the tortillas. Top with cheese and bake covered 30 minutes. Serve with sour cream, avocado, cilantro, or anything else you like on top of your enchiladas!
This recipe has a bit of kick. To make it more kid friendly, I would take one can of green chilies out of the recipe. (it doesn’t matter which one you take out)
