Wednesday WOW Recipe + Crazy Tacos
I’m making tacos tonight- my MIL’s famous tacos. They are not on the low fat healthy side, but not too crazy. She taught me how to fry the corn tortillas, it’s really the only way to go. If you want to save a fat gram or two, just use the pre-made shells, but I promise you’ll be missing out.
Yummy Meat Ingredients:
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 large garlic cloves, minced
- 3 tablespoons chili powder
- 2 teaspoons dried oregano
- 1 tablespoon ground cumin
- 3 pounds lean ground beef or turkey
- 1 (14.5 ounce) can petite diced tomatoes
- Salt and pepper, to taste
- 1/4 cup cornmeal
- Bag of corn tortillas
Crazy Easy Directions:
- Heat oil in a 12-inch skillet until shimmering. Add onion; saute until soft, about 5 minutes. Add garlic, chili powder, oregano and cumin; saute until fragrant, about 1 minute. Add beef or turkey and cook, stirring often, until it loses its raw color. Stir in tomatoes; simmer to blend flavors, about 5 minutes. Add salt and pepper, to taste. Stir in cornmeal; cook, stirring constantly, until it thickens, almost instantly. Cool and refrigerate (or serve warm for dinner as tacos or taco salad).
Fry up those taco shells- here’s how:
Heat up oil in a pan until it pops and sizzles. Take one shell at a time and fry that little guy. I use tongs and flip each side when it’s crunchy like I want. Be careful not to burn! Yum! I love tacos because they are one of the few foods I can make that all six kids eat without complaint! Definitely going to try this recipe!
