Wednesday WOW Recipes: Cauliflower Pizza Dough
I love the Wednesday WOW recipe series and have been blogging recipes with you for years. About three months ago, I made the life-change to eat gluten free (GF) and wheat free, so I’m going to start sharing this new journey with you. I’m learning just about every grocery store has a good section of GF items! The transition over has not been as hard as I thought it would be. Today, I went to the grocery store to purchase a few things before the big snow storm hit our area. I was checking out and noticed a mom and daughter in front of me laughing and talking together about the fact that they had WALKED to the store before the “blizzard” hit and now would have to walk home in the snow. Immediately, I knew in my heart, I was supposed to help them out and give them a ride home. I quickly paid for my food and rolled my cart after them, introduced myself to the mom, asking them if I could help out. We became instant friends and chatted all the way to their home, driving slowly in the dumping winter storm. Somehow the conversation turned to the mission field, homeschooling (she was a homeschool mama) and loving big! What a blessing to be at the right place at the right time to give a helping hand.
Cauliflower Pizza Dough
INGREDIENTS- watch Rachel Ray make it here
- 1 pound cauliflower florets
- 2 eggs
PREPARATION
Preheat oven to 400°F.
In a food processor, process cauliflower until finely chopped.
In a microwave-safe bowl, cook cauliflower for five minutes or until tender. Place cauliflower in a towel, and squeeze out excess water so it is completely dry.
In a bowl, mix egg and cauliflower until well-combined.
On a parchment-lined baking sheet, spread cauliflower dough out until it resembles a pizza round. Bake for 40 minutes.
Top however you want and bake in a 450°F oven for 7 minutes or until cheese and toppings have baked.

Cauliflower Mashed “Potatoes” Recipe
Servings: 4 Prep Time: 8 minutes Cook Time: 20 minutes
Ingredients:
1 head of cauliflower
3 Organic Potatoes
3 tablespoons milk
1 tablespoon butter
2 tablespoons light sour cream
1/4 teaspoon garlic salt
Freshly ground black pepper
Snipped chives
Directions:
1.Separate the cauliflower into florets and chop finely.
2.Cut potatoes into chucks with skin.
3.Bring about 2 cup of water to a simmer in a pot. Then add the cauliflower and potatoes. Cover and turn the heat to medium. Cook the cauliflower and potatoes for 12-15 minutes or until very tender.
4.Drain and discard all of the water (the drier the cauliflower and potatoes are the better) and add the milk, butter, sour cream, salt and pepper and mash with a masher until it looks like “mashed potatoes.” Top with chives.
